Adam’s Rib Smoke House is an Authentic American BBQ restaurant.

Known for our outstanding slow-smoked barbecue meats, home made side dishes and uncompromising commitment to service. We take great pride in serving Authentic American BBQ and specializing in Santa- Maria Style barbecue, the home of BBQ. Our meats are slow -smoked over real hard woods; cherry, red oak, hickory, and mesquite. Slow smoking produces a pink smoke ring; which is where true smoke flavor comes from. The longer you smoke your meat the larger the smoke (flavor) ring. All our side dishes are created in our kitchen, including our signature sweet poquito beans and creamy red potato salad.

Family OpeningOwner, Chef, Glorified dishwasher.............. We do it all. Adam’s Rib Smokehouse is owned and operated by Mike & Katrina Adams and family. Every person in the family plays an important role in creating an atmosphere comfortable for your family to enjoy our establishment. Mike Senior is the Pit Master and creator of all our recipes. Katrina manages all financial areas of the business and catering business. Our eldest son Mike manages the evening dinner hour. Mike Jr. has learned the art of BBQ right along side his father. He has become a wonderful pit master. Mike is now married to a wonderful girl, Jessica. She also work alongside the family, usually you can catch her at the register assisting customers. Our daughter Jen, graduated from Oregon Culinary Institute and fresh bakes all our desserts weekly. She also manages the restaurant in the evening and assists in coordinating all our special events. Our youngest son Matt, works part-time during the school year cooking and full time in the summer running special events, such as Bite of Oregon and Oktoberfest – pretty accomplished for a 16yr. old.

How we got our start........... Adam’s Rib Smokehouse originated as a catering service and concessions trailer operating at the Saturday Market and other festivals surrounding the Salem area in 1998. We started serving hotdogs and shaved ice and the following year introduced our smoked meats – Beef and Pork Ribs. We were such a success we found ourselves working every weekend at festivals, catering and even supplying ribs to local restaurants. In June of 2003 we opened our first restaurant on Market St. in Salem. We moved to our current location on State St. in March of 2005 and growing ever since we opened the doors. People just can’t get enough of that smoked meat flavor. We continue to expand our business to suit the needs of our patrons and look forward to a long-term relationship with our customers, friends and family.

BBQ PigWhat we offer .................... Adam’s Rib Smokehouse is a family restaurant that follows more to the traditional BBQ flair, fast and casual. We have expanded our catering to more of an upscale catering service to appeal to weddings and other formal occasions. BBQ is the choice of food for events today. We now produce our famous BBQ sauces in our kitchen for retail; they can be purchased at the restaurant. We also are apart of concessions at local festivals, events and fundraiser; include the Bite of Oregon, Summer in the City, Oktoberfest and various car shows around the area.
